It is not everyday that you get the
opportunity to dine near Australia’s best-known iconic landmark, Uluru (Ayers
Rock). Just to visit Uluru (Ayers Rock) in Uluru Kata-Tijuta National Park, Central Australia will leave most visitors in awe over its majestic beauty. To dine under the stars near Australia's "red rock" is amazing to say the least.

We were also told that when you visit Uluru the Sounds of Silence (SOS) dining experience is
something you must do – no questions asked. Naturally, during our visit Spaswinefood just had to check it out.

The bus picked us up just before sunset. We were driven to the Sounds of Silence site, outside the Uluru Kata-Tijuta National Park, where dinner was to be served. The entrance to the dining site was dramatic. As we entered the pathway Uluru (Ayers Rock) was visible in the distance.

Then as we walk down the pathway towards the reception area we heard the sounds of a didgeridoo. It is one of those times when you know you made the right decision. Yes, even on a cold evening at the beginning of winter in Central Australia.

Our Sounds of Silence dining experience
began with sparkling wines and canapés. The Australian sparkling wine served was a De Bortoli Wines, Lorimer Sparkling Wine.

As we listened to the music just off in the distance some fellow diners arrived on camels.
There
as the sun began to set over Uluru, turning the rock into an amazing red color, we were seated at our tables to begin dinner.

During dinner we
were served two De Bortoli, Lorimer wines, a white (Sauvignon Blanc 2014) and a red (Shiraz 2013).

After first course was served we were introduced to a bush
tucker inspired buffet. Many of food options were prepared using native bush
ingredients (crocodile, kangaroo, barramundi and quandong). Of course there
were alternatives for vegetarians. Since dietary needs are accommodated you can simply make the request when booking.

Soon we were dining under the stars. Yes, it was a fun evening with bush inspired tucker (food) and Australian wine.

After dinner we listened to a talk
on the southern night sky while we enjoyed dessert with a glass of port. The night
sky highlights that we were introduced to include the Southern Cross, the signs
of the zodiac, the Milky Way and other stars that were visible in the clear winter night sky.
Sitting there below the star filled sky I was
reminded that our time in the southern hemisphere was slowly coming to an end.
While the southern hemisphere greeted the arrival of winter we were spending the second last week of our #0z15 Australian travels visiting Australia's Red Centre. It is hard to think of a better way to enjoy a glass of wine than watching the night sky near Uluru (Ayers Rock). It was only the day before that we had toasted our arrival at this iconic landmark after a long journey from Alice Springs.

All too soon we left Uluru to head back
down the Stuart Highway towards Adelaide and then onto Melbourne. Still, we will always have those wonderful memories of dining under the star light sky near Uluru. Clearly there is so much to do and see at Australia's Red Centre. I invite you to join me in my travels in Australia and
